The label says "Limited Edition" because the selection is rigorous. Only the noblest pieces and with the greatest infiltration of the acorn-fed Iberian pig cross the door of this winery.

A certain marinade and then, silence. Months under the protection of the natural cold of Guijuelo so that the fat of the acorn slowly melts with the lean one. No rush.

The first cut, the veining warns. On the palate, the meat speaks for itself: sweet, extremely juicy and with a deep flavor that persists on the palate. Each slice almost falls apart when you taste it. It is a scarce production because the countryside rules. When it's over, it's over.
