We start from the entire belt of 75% Iberian pigs fed on acorns. We apply a precise marinade – just the right measure of paprika to accompany, never to cover – and we stuff it. Then, we moved away.

We let the cold of our natural wineries in Guijuelo take over. Months of slow and silent tuning. Because knowing how to heal is knowing how to wait.
