We have taken the noblest and most coveted parts of the pig to take them to our wineries in Guijuelo. What others keep for the main course, we fine-tune in casings.

The process does not admit shortcuts. We select the acorn-fed meat, apply our recipe free of the 14 allergens and let the cold of the mountains do its work. No rush. The secret ingredient is still time.

The result is a chorizo of resounding purity and intense flavour. A limited series because the true trade does not understand volumes, it understands criteria.
