Queso de Boy

It is a semi-matured and semi-hard cheese, with a firm texture, lactic aroma and a characteristic yellow colour. It is the house cheese, made with fresh milk from our farm, from 100% happy Jersey cows.

Its excellent melting capacity makes it a versatile and delicious cheese, perfect to enjoy melted on a corn tortilla, in hot preparations or simply accompanied by a good wine.

The House Cheese, the Tecpán Cheese

The warm and homely atmosphere of our restaurants began many years ago, when our grandfathers Paulino Jarquín Moreno, Lucy Richeme, Carlos Pira Tome and Isabel Arrivillaga came from Europe and settled in Guatemala, bringing with them their customs, traditions and homemade recipes of cheeses, sausages, jellies and juices. They fused cultures and combined family recipes with the delicious black and yellow corn tortillas of Mayan origin, thus starting the modern gastronomy of Tecpán.

In 1993, with half a barrel per grill, two tables, a lot of desire to work and the recipes inherited from our grandparents, we started Rincón Suizo, surrounded by the pleasant climate and the beautiful landscape of Tecpán, which transports us to a corner of Switzerland.
